The Chef, Bruno Champion, learned his trade in well-known restaurants. On his return to Normandy, he dedicated himself to creating a traditional light cuisine using local produce, adapted to modern tastes.
Laureate of the French Championships of gastronomic cuisine in 2002, organised by the Logis de France, Bruno Champion proposes his famous recipe : la terrine de pave d’Isigny au Calvados et aux pommes (Isigny steak pie with Calvados and apples)
The other dishes on the menu present a subtle and original cuisine, such as the "tartelette de pommes de terre au foie gras chaud avec une sauce à base de jus de truffes" (potato tart with warm foie gras and truffle sauce), or "l'assiette pleine mer qui met en scène des crevettes" (full sea dish starring shrimps), a "verrine de pétoncles à la crème et des petits légumes croquants en cheveux" (scallops in cream artfully presented in a small glass with crisp vegetable dressing). Not to be forgotten : "la palette de viande, agneau, boeuf et magret aux trois sauces, aux baies, à la crème fraîche ou au Calvados" (shoulder of lamb, beef or duck with three sauces, berries, fresh cream or Calvados) : we are after all in Normandy.
